Jim and Alice Salamone have been making the finest, freshest pasta in Rochester for 40 years. Jim started cooking with his mother at age 14, making fresh pasta, especially ravioli, all by hand. After Jim and Alice were married, they continued making their fresh pasta the same way his mother made it — with the finest, freshest semolina from Italy and absolutely no artificial flavors, colors, or preservatives. Now in 2009, pasta is still the family business. The recipes have not changed and neither has the quality.
Over the years, Salamone Fresh Pasta could be found on the menus of many of the local country clubs and restaurants. It was also available via private catering for weddings, graduations and other events. Now, for the first time, it is being sold directly to the public at various farmers' markets in the Rochester area.
Among the products which are offered at the markets are a variety of flavors of long cut pastas, ravioli, gnocchi, fresh pasta salad and fresh vegetable sauce. The different flavors include plain, whole wheat, spinach, roasted red pepper, lemon chive, basil, and tomato basil.
