RECIPE FOR THIS WEEK

Selected by Maxine Manjos

Chickpea and Eggplant Salad

This recipe involves some quick broiling of eggplant and our old friend chickpeas. Do you remember when we charred them in oil in a Monroe Village Farmers Market earlier this year? This time they're broiled until golden, then added to the broiled eggplant and a few other ingredients for an early fall salad. These are fresh and simple flavors. Personally, I'd add a chunk of feta cheese and a slice of hearty bread. Fine fixin's for a simple supper.

Click on the link below below and enjoy the novelty of a warm salad --but you can have it cold if you want to.
